Rojo Mexican Grill is the place to go for authentic Mexican food near you. It’s located in two great spots in Minnesota, one at St. Louis Park and one just opened in Edina at the Southdale Center. They’re open seven days a week for lunch and dinner and you can even host your private event there.

What to Expect

The restaurant features authentic cuisine from our neighbors to the south. The co-owner Michael McDermott is the son of the founders of Chi-Chis which explains the inspiration behind creating Rojo Mexican Grill. The restaurant is not a take on Chi-Chis recipes, outside of the fried ice cream, but features its own unique take on Mexican.

You won’t find a cheesy Americanized version of this Mexican restaurant when you walk in the door; there are no sombreros on the wall or Mariachi music playing on the sound system. Rather, you’ll find a modern, warm and open atmosphere featuring beautiful wood accents from the dark floors to the high ceiling beams. Check out the glass-fronted refrigerators showing off the fresh ingredients, the easy-to-see views of the kitchen and the wrought iron chandeliers in the dining room.                                                                

The Menu

The menu features authentic food and an impressive tequila menu. Try a margarita and almost 100 tequila possibilities. To eat, start with an appetizer of fresh guacamole, skewers, nachos or avocado egg rolls. Dive in to a soup and salad like the Tortilla Soup or Southwest Caesar.

Dinner entrees vary from the Chimichanga to the Burrito. Try something off the taco menu, enchiladas, and pair it with a side of black beans. Your friends that don’t care for Mexican food will love the wood-grilled Angus beef burger or the ribs and the fried ice cream for dessert.

Location and Hours

When you’re ready for a night out at one of the best Mexican restaurants in town, stop in to Rojo seven days a week from 11am to 10pm Sunday through Thursday, 11am to 12am Friday through Saturday at two great locations in town including 1602 West End Boulevard in St. Louis Park or Southdale Center in Edina.
